Very Strawberry Spread - "Fruit First" - More Fruit & Less Sugar!

Our "fruit first" very strawberry spread (which I cannot legally call a jam because it has too much fruit in it!!) is like summer in a jar. After years of experimenting, I finally found a method of producing strawberry "jam" that is bright red, doesn't have floating fruit, and doesn't taste overly cooked. This spread is it! The strawberry flavor is so pronounced and fresh in this spread!
This recipe has more fruit than sugar in it, which makes it extra fruity and flavorful, but it still has enough sugar in it to spread easily, look gorgeous, and be perfectly balanced and delicious. We are currently offering batches with our own spray free strawberries.

Ingredients: strawberries, sugar, low methoxyl citrus pectin, citric acid, and monocalcium phosphate (activates pectin).
